Mexican Chicken Soup-healthy

Ingredients

    1 T. olive oil
    1 white onion
    3 cloves garlic
    3 t. mild chili powder
    2 bay leaves
    8 oz. boneless, skinless chicken thighs (i'll use breasts)
    1 red potato
    1 tomato
    1 carrot
    4 c. low sodium chicken stock or water
    1/4 t. salt
    1/4 t. black pepper
    1/2 c. corn kernels
    few drops of hot sauce (optional, unless you're Andy)
    1/4 c. chopped cilantro (plus a few leaves for garnish)
    2 corn tortillas, cut into slivers
    2 limes, quartered
