Eggplant & Chickpea Tagine

Ingredients

    1 small Eggplant, cut 1/2 inch dice
    2 Zucchini, thick cut moons
    4 Tbs Olive oil
    1 large Onion, sliced
    2 clove Garlic, minced
    2 cups Brown mushrooms, halved
    1 Tbs ground Coriander
    2 tsp ground Cumin
    1 Tbs Cinnamon
    2 tsp ground Turmeric
    4 small new Red Potatoes, Quartered
    2 1/2 c Tomato puree
    1 TBS Tomato paste
    1 TBS Ketchup
    .25 tsp Cayenne pepper
    1/3 c chopped dried Apricots
    3 c canned Chickpeas (2 cans drained & rinsed)
    Salt & ground Black pepper (optional)
    1 TBS Cilantro, chopped for garnish
