Low Fat Whole Wheat Fruitcake

Ingredients

    * *Rum, 4 fl oz
    * Fruit juice, 4 oz
    * Pears, dried, .25 cup, chopped
    * Prunes, dried, .25 cup, pitted and chopped
    * Apples, dried, .25 cup chopped
    * Raisins, 1 cup (not packed)
    * Dates, 0.5 cup, pitted, chopped
    * Apricots, dried, .25 cup, chopped
    * Apple Sauce, 2 tablespoons
    * Pecans, .25 cup, chopped
    * Walnuts, .25 cup, chopped
    * Salt, .5 tsp
    * Whole Wheat Flour, 1.5 cup
    * Baking Soda, .75 tsp
    * Ginger, ground, .5 tsp
    * Cinnamon, ground, 1 tsp
    * Cloves, ground, .25 tsp
    * Nutmeg, ground, .25 tsp

    **The rum can be replaced with all juice or even tea, coffee or water.

    Its difficult to find dried fruits that have no added sugars, but they are out there. Choose organics with no added sulfates or sulfides when you can.

Description

This Is Low In Fat, Lower In Added Sugar And Higher In Fiber Than Traditional Fruitcake, But It Is Still Just An Occasional Treat For The Holidays. You Can Make Muffins Or Cookies With This Dough, Too.
