Lidia's Soup

Ingredients

    2 pounds Swiss chard
    1 onion chopped(about 1 cup)
    2 celery stalks cut into chunks(about 1 1/2 cups)
    1/3 cup fresh Italian parsley
    8 fresh basil leaves
    3 tblsp. Olive oil
    1/2 tsp peperoncion flakes
    1 tblsp. tomato paste
    9 cups boiling water
    2 tsp. salt
    Fresh ground black pepper to taste

    For each serving of soup:
    1 egg
    1/2 slice day old county bread or 3-4 large croutons
    Freshly grated pecorino cheese to taste
