- 3 cups dry couscous or Israeli couscous
1 cup grapefruit or orange juice
3 cups water
coriander
salt
pepper
1.5 cups dried cranberries (or less)
1 cup slivered almonds
2 large oranges, zest and flesh (chopped into bite-size pieces)
1 tangerine, zest and flesh (chopped into bite-size pieces)
1 tbsp fresh mint, chopped
a few leaves butter lettuce, watercress, or other greenery, chopped
1 15-oz can garbanzo beans
1 tbsp olive oil
1 tbsp lemon juice (or more to taste)
salt, pepper

A Delicious Grain Salad That I Love To Bring To Potlucks. It Looks So Festive And Can Be Served Warm Or Cold. The Original Recipe Only Calls For 1 Cup Of Dry Couscous, But I Use A Lot More When I'm Bringing It To An Event.From Weight Watchers One Pot Co
