Very Veggie Polenta Lasagna

Ingredients

    1 cup onion, chopped
    1 cup carrots, chopped or shredded
    1 cups mushrooms, chopped
    1 cup broccoli, chopped
    1/2 cup red bell pepper, chopped
    1 cup raw kale, chopped
    1 summer squash, chopped (about 1 cup)
    1/4 cup white wine
    1 26 oz. can Del Monte Traditional Spaghetti Sauce
    1 tsp. dried oregano
    1 tsp dried basil
    1/2 tsp fennel seed
    1 tsp dried marjoram
    1 tsp black pepper
    6 oz. low fat or fat free cottage cheese
    2 egg whites
    3 Tbs. dried parsley flakes
    1 roll (48 oz.) ready to serve polenta
    8 oz. shredded Mozzarella cheese
