Parmesan Cous Cous Salad

Ingredients

    Cous Cous (I used Near East Parmesan)
    1 1/4 Cup Low Sodium Low Fat Chicken Broth
    2 Tbsp Olive Oil
    1 Cup Grated or Chopped Carrots
    1/3 Cup Chopped Olives
    6 Tbsp Capers
    8 Tbsp Pecorino or Parmesan Cheese

Description

I Used Near East Cous Cous Which Is Pretty High In Sodium. It Would Be Easy To Substitute Plain Cous Cous And Add More Spices.
