Lentil-veggie Loaf

Ingredients

    1/2 cup ground almonds
    1 onion, diced
    1 clove garlic, minced
    1 carrot, diced
    2 stalks celery, diced
    1 cup mushrooms, chopped
    1 cup oat bran
    1 cup dried lentils (makes 2 cups cooked)
    1 tsp. tomato paste
    1/4 cup flaxseed meal
    Salt and pepper to taste

    Recommended herbs and spices to add: thyme, parsley, sage, marjoram, coriander, chili powder, dry mustard, and cumin.
