Ingredients
- 1 cup brown rice
2 cups water
1 tbsp olive oil
1 medium onion, coarsely chopped
2 cloves garlic, crushed
2 medium tomatoes, finely diced (16 oz can can be substituted)
1 medium zucchini, coarsely chopped
1/2 tsp oregano
1 16 oz can of kidney beans, drained and rinsed
salt and pepper to taste
1 cup shredded cheese (I used reduced fat cheddar)
