Ingredients
- 2 Tbsp Earth Balance margarine
About 10 spears of asparagus, diced
1/2 cup leeks, whites to light green only, sliced thin
1 cup cremini or white mushrooms, sliced
1 tsp dried or 1/2 tsp fresh, chopped thyme
1/2 tsp tarragon
2 Tbsp sherry (optional)
1/2 cup cashews soaked in water
overnight in the refrigerator
8 oz Mori-Nu Firm or extra firm Silken tofu
3/4 cup very strong vegetable broth*
3 Tbsp Nutritional yeast
2 Tbsp potato starch (can be found in Kosher section of grocery stores. You can substitute corn starch if necessary, but the texture will change)
2 Tbsp flour
1/2 tsp onion powder
salt and black pepper to taste
6 full sheets of phyllo cut at 2/3 of the way lengthwise, remaining 1/3 of each sheet reserved
Canola oil spray
dash of salt
* I make my own seitan. The broth it was cooked and is stored in is an alchemical miracle of rich flavor. This is what I use for the broth in this dish. If you don't have your own homemade seitan broth, use a very rich, flavorful broth by using a highly concentrated bouillon paste or cube dissolved in a hot water.
