Ingredients
- 2 Tbsp soaked, raw cashews
1 clove garlic, peeled
1 cup fresh mixed herbs: 1/3 basil, 1/3 spearmint, 1/3 combination of any other fresh herbs you like, eg: lemon balm, oregano, marjoram
1 medium Haas avocado
2 Tbsp balsamic vinegar (this will darken the dressing. If you have color issues, use a paler vinegar)
1/2 tsp maple syrup
1 Tbsp lemon juice
2 Tbsp vegan mayonnaise
salt and pepper to taste

This Dressing Can Be Used As A Salad Dressing For Greens, For Pasta Or Potato Salad. Versatile, Delicious And A Little Something Different From The Ubiquitous Basil Pesto.
