    2 lbs small potatoes, such as baby yukons or red-skinned new potatoes
    coarse salt
    3/4 cup dry white wine
    1.5 cups chicken stock or broth
    1 tbsp. fresh thyme leaves, chopped
    coarse black pepper
    8 dried apricots, cut in half
    2 tbsp. olive oil
    4 1.5" thick boneless center-cut pork chops
    1/4 cup fresh sage leaves, finely chopped
    4 tbsp. unsalted butter
    3 large shallots, chopped
    1 tbsp. all-purpose flour
    1/4 cup fresh flat-leaf parsley leaves, chopped
    juice from 1/2 lemon
    3 tbsp. chopped fresh chives (12 blades)
    zest of 1 orange
