2 boxes (9 oz each) frozen chopped spinach, thawed, drained
1 ½ cups uncooked instant brown rice
1 teaspoon Italian salad dressing
1 teaspoon pepper
2 cups diced cooked ham
¾ cup shredded reduced-fat Cheddar cheese (3 oz)
1/6 cup grated Parmesan cheese (1/4 for mixing in casserole, 1/8 cup reserved for topping)
¼ cup whole wheat bread crumbs, dry, seasoned
