Artichokes Gratinata


    Artichokes Gratinata

    3 tablespoons olive oil
    1 garlic clove, minced (I use two or three)
    1 pound frozen artichoke hearts, thawed (I use canned, and usually use between 2-3 cans)
    2 tablespoons chopped fresh parsley leaves (I've used dried. works just as well, and sometimes I add Basil too)

    3/4 teaspoon salt
    1/4 teaspoon freshly ground black pepper
    1/8 teaspoon red pepper flakes (and the same amt in smoked paprika)
    1 red bell pepper
    1/2 cup chicken broth (or vegetable or mushroom stock)
    1/4 cup Marsala wine (just add extra chicken or vegetable stock if you do not want to use wine)
    2 tablespoons butter (or vegetarian equivalent)
    1/3 cup plain bread crumbs (I use whole wheat panko bread crumbs)
    1/3 cup grated Parmesan


Great Way To Serve Artichokes. I've Served This At Holiday Dinners & Find It Easy To Make, Easy To Take, And You Can Eat It Either Cold Or Hot. My Variation Is Based On Giada's Recipe At Food Network.
