African Stew


    1 1/2 to 2 pounds beef or lamb, cubed (I like beef better and I tend to just use whatever steak or roast I have in the freezer)
    1 large onion, diced
    3 cloves garlic, minced
    2 tbl flour (I have celiac so I use sorghum flour, but regular old all-purpose flour works too)
    approx. 2 cups of chicken broth
    1 15 oz can diced tomatoes
    2 bay leaves
    1 tsp ground cinnamon
    2 tsp ground ginger
    2 tsp ground coriander
    2 tsp ground cumin
    salt and pepper to taste
    1 15 oz can chickpeas, drained and rinsed
    handful of fresh cilantro leaves
