Amy's Black Bean Salad


    1 15.5 oz can black beans
    2 large tomatoes, chopped
    1 cup frozen corn kernels, thawed
    1/2 to 1 cup chopped onion
    1 jalapeno pepper, chopped fine (add more if you want more "heat")
    2 TBSP Extra Virgin Olive Oil
    2 TBSP Balsamic Vinegar
    2 TBSP Lime Juice
    2 TBSP chopped fresh cilantro*
    salt & pepper to taste

    *Note - dried cilantro can be used, but it does not have the same wonderful flavor as fresh cilantro. Fresh is HIGHLY recommended.
