Ingredients
- 2 c fat-free, reduced-sodium chicken broth
1 3/4 c water
add 1/4 c of mirin* if desired
4 Tbsp low-sodium soy sauce
1 Tbsp fresh minced ginger root
1 tsp chili-garlic sauce (like Sriracha)
1 14 oz package water-packed firm tofu, drained and cut into cubes
1 c shredded carrots
3 strips of green bell pepper
3 strips of yellow bell pepper
3 strips of orange bell pepper
1 cup red onion, chopped
5 tbs cilantro, minced
5 green onions, sliced
*Mirin is also known as sweet sake, mirin is a low-alcohol rice wine and the key ingredient in teriyaki sauce. You can substitute brown sugar, but it won't give you the same authentic Japanese flavor.
