Ingredients
- DRY INGREDIENTS:
3 C. Plain Old Fashioned Oatmeal
1/2 C. Brown Sugar
1/2 C. White Sugar (may replace with Splendra)
1 tsp. Cinnamon
1 Ts[ Baking soda
Salt to suit
WET INGREDIENTS:
1 C. nonfat milk
1/2 C. Canola Oil (may replace with unsweetened applesauce)
2 large eggs (may replace with 3 egg beaters)
1 egg white
1 T. Vanilla
Additions as desired: 1/2 C. raisins, dried cranberries or dried cherries.
Beat eggs, oil (or applesauce) & vanilla until well blended Stir in the dry ingredients and mix completely. Stir in milk and additional ingredients, as desired.
Pour into a greased 8 X 8 pan: bake at 400 degrees for 25-30 minutes.
Serve warm like coffee cake or crumble into a bowl & add milk to your taste. (Heat in Micro for warm cereal). Store remainder tightly covered in refrigerator or freeze in freezer bags for quick removal for next serving.
