    1 cup dry quinoa
    2 cups halved cherry tomatoes (or 2 tomatoes, seeded and diced)
    1 cup diced, seeded, peeled cucumber
    1/4 cup chopped fresh Italian parsley
    1/4 cup lemon juice
    1 Tablespoon extra-virgin olive oil
    1 Tablespoon grated lemon peel
    3/4 teaspoon salt
    1/4 teaspoon ground black pepper
    2 scallions (white and green parts), finely chopped
    8 oz shredded or diced roast turkey breast (without skin)
