Authentic Indian Chicken Curry


    2 pounds boneless skinless chicken breast, cubed
    1 cup onions, diced
    1 large tomato, diced
    1 T cumin, toasted and ground
    1 T coriander, toasted and ground
    1 tsp turmeric
    2 tsp ginger
    5 gloves garlic, minced
    2 tsp salt (or to taste)
    1 T lemon juice
    1 T mustard seed (black)
    1 tsp red pepper (or to taste)
    .5 tsp cinnamon, freshly ground
    Curry leaves- one or two stems

    1 cup basmati rice (you can microwave it for 20 minutes with two cups of water and a bit of salt)
