Roast Duck With Grape & Almond Agrodolce & Vegetable Accompaniments

Ingredients

    1 duck, 1.8-2 kgs
    1 lemon, quatered
    2 sprigs rosemary
    Olive oil
    Sea salt & freshly ground balack pepper
    2 Tbl olive oil
    1 red onion, finely chopped
    2 cloves garlic, crushed
    2 tsp finely chopped rosemary
    3 Tbl caster sugar
    4 Tbl balsamic vinegar or red wine vinegar
    1/2 cup Marsala, port or sherry
    1/2 cup raisins
    1 cup seedless red grapes, halved
    2 Tbl slivered almonds, toasted
    2 Tbl chopped parsley
    1 kg waxy potatoes, washed
    3 Tbl olive oil
    300g green beans
    3 handfuls spinach leaves
    Knob of butter
    2 cloves garlic, crushed
    Squeeze of lemon juice
