4 cups cooked brown rice (I used 2 bags of Success boil-a-bag brown rice)
2 scallions, sliced thin (white and green parts)
4 teaspoons freshly grated ginger
1/4 cup soy sauce
1/4 cup rice wine vinegar
2 tablespoons dark brown sugar
3 grilled or rotisserie chicken breasts, sliced
