- 16-20 oz Lean Ground Turkey
1Red Bell Pepper, chopped (1/2 pieces)
1Yellow or Orange Bell Pepper, chopped (1/2 pieces)
1Yellow Onion, diced
2-3 Cloves of Garlic, minced
2/3 to 1 Cup Rib Celery, chopped
1 Can Red Kidney Beans, drained and rinsed
1 Can Pinto Beans, drained and rinsed
4 Cups Chicken Bouillon
2 Cans (14 ½ oz each) Chopped Tomatoes
1 tsp Crushed Red Pepper
2 Bay Leaves
Salt & Pepper to taste
1 -2 Tbs Cornstarch mixed in a small amount of cold water
Spice Mix: Ground together with mortar and pestle if possible
1/8 tsp cayenne pepper
1 tsp paprika
1/8 tsp cumin, ground
1/2 tsp crushed red pepper
4 tsp Chili Powder Make your own mix of several different types; in the Mexican isle look for the individual bags of New Mexico, Ancho, Arbol, California, Mulato, etc. Mix all together one or two days prior and store in the freezer.
