Kale Soup

Ingredients

    1 tbsp olive oil
    8 garlic cloves, minced
    1 large yellow onion, chopped
    4 cups raw chopped kale, ribs removed
    4 cups low-fat, low-sodium chicken or vegetable broth
    1 lb ground chicken
    1 -15 oz can white beans (navy, cannellini) undrained
    1 -15.5 oz can of low sodium garbanzo beans (drained)
    1 -14.5 oz can diced tomatoes
    2 tbsp dried Italian Herb Seasoning
    Sea Salt and Pepper to taste
    1 cup chopped Parsley
