Ingredients

    1 Eggplant, whole unpeeled
    1 small white onion, minced
    3 cloves of garlic, minced
    1 tblsp olive oil
    1/4 tsp turmeric (traditionally saffron if you have it)
    1/4 tsp black pepper
    1/2 tsp salt
    1 cup plain nonfat greek yogurt
    1 tblsp fresh mint, finely chopped

Description
