Asian Lamb Salad


    2 fresh red chillies, seeded (or two teaspoons from jar)
    1 clove of garlic crushed
    50g palm or dark brown sugar
    175ml rice vinegar
    1 medium carrot
    1 long telegraph cucumber
    1 stick of lemon grass (or from the jar)
    1/2 cup fresh mint leaves
    1/2 cup cilantro leaves
    100g bean sprouts - washed and trimmed
    2 tablespoons olive oil
    2 lamb fillets - about 500-600g
    1 tablespoon fish sauce
