Reuben Bake

Ingredients

    1 package (12 oz) egg noodles
    4 T. butter
    1 can (16 oz) sauerkraut, drained
    1/2 lb deli corned beef, chopped
    1/2 cup mato
    1 T. ketchup
    2 T. chopped pickles
    1 t. onion
    2 tomatoes, sliced thin
    2 cups shredded swiss cheese
    1 cup milk
    2 cups crushed rye crackers
    1 t. caraway seeds

    1. Heat oven to 350 degrees. Coat 13x9x2 inch baking dish with nonstick cooking spray.
    2. Cook noodles following package directions. Drain and toss with 2 T butter. Place in prepared dish; top with sauerkraut, then corned beef. In abowl, mix mayo, ketchup, pickles and onion. Spread over corned beef. Top with tomatoe and cheese.
    3. Pour milk evenly over the top. Melt remaining 2 T butter and toss with rye cracker crumbs and seeds, sprinkle over top. Bake at 350 degrees for 45 minutes. Let stand 10 minutes then serve.
