    3 Cups cut-up cooked chicken breast
    1 Tbsp soy sauce
    1 1/2 tsp salt (optional)
    pepper to taste
    2 Tbsp lemon juice
    1 can (8oz) sliced water chestnuts
    1 can (16 oz) bean sprouts
    1/2 Cup chopped onions
    1 Cup chopped celery
    1 Cup toasted almonds (sliced or slivered)
    1 Cup mayo (fat-free)
