Glug of olive oil
3/4 pound (4 cups) thinly sliced leeks
2 large onions, thinly sliced
2-3 cloves garlic, crushed
2 teaspoons sugar
Salt and pepper
1 1/2 cups white wine, apple juice, or cider
3 2/3 cups veg or chicken stock
Topping:
Baguette, sliced
Crushed garlic (optional)
2 to 3 handfulls grated gruyere or cheddar.
