    1 c. all-purpose flour

    1 1/2 t. baking powder
    1 t. salt
    2 t. olive oil
    1 c. lukewarm skim milk

    Toppings
    2 plum tomatoes, seeded and chopped
    Juice of 1/2 lime
    1 avocado, seeded and chopped
    pinch of salt and pepper
    4 oz. crumbled queso fresco
    Torn fresh cilantro
