Arroz Con Pollo


    2 cups rice (white rice works best)
    1 can diced tomatoes (I use low sodium)
    3 cups of liquid total (chicken broth plus what you can drain from the tomatos...usually about 2.5c chicken broth)
    chopped onions (about 1/2 cup)
    green olives (or black if you prefer)
    1/2 to 1 chicken breast, cooked and shredded
    1 cup frozen mixed veggies
    1 package Sazon Goya (this can be found in the Hispanic food aisle in the grocery store)
    seasonings (I use a little salt, pepper, thyme, curry powder, cilantro, basil, and oregano)
