African Sweet Potato Stew With Red Beans


    oil spray
    1 med onion
    1 clove garlic
    4-5 cups cubed sweet potato (about 3 potatos)
    1 can kidney beans
    1.5 c vegetable broth
    1 red bell pepper
    1/2 c water
    1 t grated fresh ginger (remember to peel it first)
    1/2 t salt
    1/2 t ground cumin
    1/4 t black pepper
    1 (14.5 oz) can diced tomatoes, drained
    1 (4 oz) can diced green chiles, drained
    3 T creamy peanut butter
    3 T chopped dry-roated peanuts
    6 lime wedges
