    Quinoa - 1 1/2 cups dry + 3 cups water
    1 avocado
    green onions
    3 limes - juice and zest
    1/3 c red onion, finely chopped
    1 c. bell pepper (1-2 peppers)
    1 container cherry tomatos, halved
    cilantro (abt. 1 cup)
    mint (abt. 1 cup)
    1 cup cucumber
    1 chicken breast, cooked and sliced
    1/4 cup olive oil (more or less to taste)
    salt
    pepper
    cumin and coriander to taste
