Veggie Chili

Ingredients

    3 tbs canola oil
    3 large onions, chopped
    1 lb fresh mushrooms, chopped
    1 large head broccoli florets, chopped
    2-3 leeks, light green section, chopped
    1 clove garlic, minced
    2 tbs chili powder
    1 tsp cumin
    ¼ tsp cinnamon
    40 oz tomatoes, peeled/diced
    6 oz tomato paste
    16 oz stewed tomatoes, chunks
    1 tbs vinegar
    1 tbs light brown sugar
    48 oz kidney beans (light and dark)*

    * If you drain the liquid from beans, add 1 cup of water (or beer).

    In large pot, heat oil to sauté onions. Add broccoli, mushrooms, leeks, garlic, chili powder, cumin and cinnamon. When onions are clear, add tomatoes, paste, vinegar, brown sugar.
    Finally, add beans. Cook over low heat for about an hour, until thickened.

    Makes 5 Quarts!
    (20 one-cup servings)
