Ingredients

    1-3 cloves garlic, minced
    1/2 onion, chopped or sliced fine
    1/2 can Cannellini beans, rinsed
    assortment of winter greens, such as kale, spinach, Swiss chard, mustard, coarsely chopped
    extra virgin olive oil, approx. 3 T., divided
    salt and pepper to taste
    sprinkling of red pepper flakes
    1 teaspoon apple cider vinegar
    1 oz. freshly grated Parmesan cheese
    crusty whole grain bread, warmed and sliced
