Ingredients
- Mince onion , carrot , celery in food chopper. Saute in oil misted saucepan. Add 1/4 c. of the chicken broth & simmer lightly until tender. Meanwhile cook the macaroni until al dente , drain & set aside.
Stir in the flour , slowly add the rest of the chicken broth to pan & almond milk. Whisk & cook till smooth about 4 to 5 minutes. Add the cheese , pepper if desired. Stir in macaroni. Serve in bowls topped with tomato & baguette( toasted ) or croutons.
