2 cups of grated carrots (4-6 carrots depending on size)
1 T Lemon juice or 1 fluid oz
2 eggs
1/2 cup Splenda (may blend with Brown Sugar-Twin if desired)
1/4 cup of Extra light Olive oil or Applesauce or combination
1/2 cup gluten free Flour (Rice flour or Combination of Tapioca, Rice, Potato flour)
1/2 cup of Almond Paste
1 teaspoon Baking Powder (gluten free)
1 teaspoon Baking Soda (gluten free)
2 teaspoons cinnamon
1 t ginger
½ 1 t Sea Salt
