Luncheon Fruit Pita

Ingredients

    1/2 cup (4 oz) (Philadelphia) Fat Free Cream Cheese
    1/4 tsp Coconut Extract
    1 tbsp Splenda Brown Sugar Blend
    1 cup (2 small) Red Delicious Apples, unpeeled, cored and chopped
    1 cup (one 8 oz can) crushed Pineapple, packed in fruit juice, drained
    1/4 cup (1 oz) Walnuts, chopped
    1/2 cup Lettuce, finely shredded
    2 pita rounds, cut in half (I use Sahara 100% whole wheat pitas)
    1 tbsp + 1 tsp Flake Coconut


    HINT:
    To make opening pita rounds easier, place pita halves on a paper towel and microwave on HIGH for 10 seconds. Remove and gently press open.
