    3 cups diced red potatoes
    1 cup chopped baby portabella mushrooms
    1 cup chopped asparagus
    1/2 cup DelAllo diced tomatoes
    1/2 cup Breakstone's 2% small curd cottage cheese
    1/2 cup Fage 0% fat plain greek yogurt
    1/2 cup lowfat mexican style shredded cheese
    1 tbsp light margarine
    1 tbsp olive oil

I Had No Idea What I Was Making When I First Started Throwing Things Into Pans On The Stove. When It Came Out, It Was A Hearty And Creamy, But Low-fat And High-protein, Casserole That My Whole Family Loved ... Even A Picky Toddler!
