Meat Loaf and Mashed Potatoes

Ingredients

Meat loaf with mashed potatoes isn't something you'd expect to see on a spa menu, but it's a fixture at Miraval Resort & Spa in Tucson, Arizona. 'We simply took everyone's favorite comfort food and incorporated healthy ingredients to lighten it up,' says executive chef Chad Luethje. The first change was replacing regular ground beef with the lean variety. Then Luethje mixed in veggies, like carrots and red peppers, and lentils for antioxidants and fiber. To give the potatoes a creamy texture minus the fat, he used Yukon Golds, which have a buttery flavor. The result: a filling comfort meal that won't pack on pounds!
