  • 1 cup thinly sliced zucchini
  • 1 tablespoon olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons (1 ounce) shaved fresh Parmesan cheese
