- 6 (6-ounce) bluefish fillets, skin-on

Although Bluefish Are Available From The Southern Atlantic During Cooler Months, They're A Summer Delicacy Off The Coast Of Massachusetts. Substitute Fresh Spanish Mackerel If You Can't Find Bluefish.
