Gravlax with Russian Salad

Ingredients

  • 4 Yukon Gold or other thin-skinned potatoes (1/2 lb. each), scrubbed
  • 1 pound cauliflower florets (4 to 4 1/2 cups), rinsed
  • 2 carrots (1/4 lb. each), rinsed and peeled
  • 1/2 pound green beans, ends and strings removed, rinsed
  • 3 gold or red beets (about 3 in. wide), tops trimmed, scrubbed
  • 3/4 cup white wine vinegar
  • 1 1/2 cups regular or reduced-fat mayonnaise
  • 1/2 cup finely chopped cornichons or sour pickles
  • 1/2 cup drained capers
  • 1/2 cup chopped fresh dill or 1/4 cup dried dill
  • 1 tablespoon Dijon mustard
  • 1 tablespoon dry mustard
  • About 1/2 teaspoon salt
  • Homemade gravlax (see notes)
  • 6 to 8 pieces thin-sliced pumpernickel or rye bread (about 1/2 lb. total), cut into quarters
  • Pepper
