Rice:- 2 1/4 cups water
- 1 1/2 cups uncooked long-grain white rice
- 1 teaspoon cumin seeds
- 1/4 teaspoon salt
- 1 fresh bay leaf
- 1 fresh kaffir lime leaf
- 1 cup frozen peas, thawed
Remaining ingredients:- 3 tablespoons dry-roasted cashews, salted and chopped
- 2 tablespoons chopped fresh cilantro
