  • Salad:
  • 1 large Walla Walla or other sweet onion, cut into 1/2-inch-thick slices (about 1/2 pound)
  • 1 pound portobello mushrooms, stemmed
  • 1/4 cup low-sodium soy sauce or tamari
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • 1 tablespoon chopped fresh chives
  • 1 tablespoon chopped fresh flat-leaf parsley
  • 1/4 teaspoon freshly ground black pepper

  • Sauce:
  • 1 cup fat-free, less-sodium chicken broth
  • 1 teaspoon red currant jelly
