Ingredients

  • 1/3 cup fat-free buttermilk
  • 3 tablespoons frozen orange juice concentrate, thawed
  • 1 tablespoon vanilla extract
  • Cooking spray
  • 1 teaspoon water
  • 1 large egg white, lightly beaten
  • 1 teaspoon sugar

  • Filling:
  • 1/4 cup fresh orange juice
  • 1/4 teaspoon cornstarch
  • 1/4 teaspoon vanilla extract
  • 3 cups navel orange sections (about 2 large oranges)
  • 1 cup chopped fresh pineapple
  • 1 cup frozen reduced-calorie whipped topping, thawed
  • 2/3 cup flaked sweetened coconut, toasted
