Salad Nicoise

Ingredients

  • French Vinaigrette Dressing:(mix in order of listing, makes about 1 1/2 cups)
  • 2 tablespoons lemon juice
  • 2 tablespoons Dijon mustard
  • 4 tablespoons red wine vinegar
  • 1 to 2 cloves of garlic, finely minced
  • salt and pepper to taste
  • 1 tablespoon each chopped basil, tarragon, and oregano (1/2 teaspoon each if dried)
  • 1 cup canola or olive oil or combination
  • 1 pound new red potatoes
  • 3 Chopped green onions
  • 1 teaspoon dried dill
  • French vinaigrette dressing (recipe above)
  • 1 12 oz. or 2-5 oz. cans of white albacore canned tuna
  • 1/4 cup mayonnaise
  • 1/4 cup lemon juice
  • 1 teaspoon dill
  • 2 heads of Boston, Romaine or any preferred mixture of lettuce or greens
  • 1/2 pound snow peas, blanched ( I leave this one out a lot)
  • 3 tablespoon small capers
  • several thin slices of red onion
  • sliced tomatoes as desired
  • hard boiled eggs, sliced as desired
