2 tablespoons olive oil 1 cup onion, diced 1 cup celery, diced 1/2 cup carrots, diced 2 cloves garlic, chopped 1 teaspoon fresh dill, chopped 1/2 teaspoon fresh thyme leaves 1 1/2 cup cauliflower florets 4 cups vegetable stock 2 cups potatoes, peeled and chopped 2 bay leaves Salt and white pepper to taste

In A Large Saucepan, Heat The Oil And Saute The Onion, Celery, Carrots, Garlic, Dill And Thyme For 5 To 7 Minutes, Or Until Tender And Translucent. Add Cauliflower And Cook 2 To 3 Minutes. Add Stock And Potatoes, Cover And Cook On Medium Heat For 20 To 30
