Apple Walnut Vinaigrette


1 apple, peeled, quartered and cored 2 teaspoons chopped red onion 5 tablespoons granulated sugar 1/2 cup good-quality apple cider vinegar 1/2 teaspoon dry mustard 1/2 teaspoon salt 1/4 cup walnut or hazelnut oil (cold-pressed for flavor)
