1 (9-inch) unbaked pastry pie crust 1 pound sweet potatoes, baked, peeled and pureed (see note below) 1/2 cup (1 stick) butter, softened 1/2 cup granulated sugar 1/2 cup dark brown sugar 1 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg 1/4 teaspoon salt 2 eggs 1 cup half-and-half 1 teaspoon vanilla


Preheat Oven To 350 Degrees. Fit Crust Into A 9-inch Pie Plate. With An Electric Mixer, Beat Potatoes, Butter, Both Sugars, Cinnamon, Nutmeg And Salt On Medium Speed Until Creamy. Beat In Eggs. Reduce Speed To Low And Beat In Half-and-half And Vanilla. Sc
